Ingredients:

  • 1 large eggplant (cut into 1/4 inch rounds)
  • 4 tablespoons olive oil
  • 1 log of goat cheese (or 1/2 c nutritional yeast)
  • 1⁄2 cup pizza sauce (or tomato sauce)
  • 1 tablespoon hot honey
  • 2 roasted red peppers (chopped)
  • 1⁄4 cup black olive slices
  • 1 cup fresh herbs or arugula (to top)
  •   salt and pepper (to taste)

Instructions:

1. Preheat the BBQ. 2. Brush each eggplant round with olive oil and season with salt and pepper. 3. Place eggplant on the hot grill and cook on 1 side for 5 minutes. 4. Turn over eggplant and top with pizza sauce, roasted red peppers, olives, and goat cheese or nutritional yeast. 5. Cook for another 5 minutes, then remove from heat and top with fresh herbs and a drizzle of hot honey to serve.
