Ingredients:
- 1 can white beans (drained and rinsed)
- 2 small shallots (chopped)
- 1⁄2 lemon, juiced
- 2 teaspoons red wine vinegar
- 2 tablespoons extra virgin olive oil
- 1⁄4 cup fresh herbs (use a combination of finely chopped rosemary, tarragon and thyme)
- salt and pepper (to taste)
Instructions:
- Combine all ingredients into a large serving dish or bowl.
- You can serve right away if desired, but it tastes best if you let the flavours sit for a few hours or overnight before serving.
