Ingredients:

  • 1 can white beans (drained and rinsed)
  • 2 small shallots (chopped)
  • 1⁄2 lemon, juiced
  • 2 teaspoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1⁄4 cup fresh herbs (use a combination of finely chopped rosemary, tarragon and thyme)
  •   salt and pepper (to taste)

Instructions:

  1. Combine all ingredients into a large serving dish or bowl.
  2. You can serve right away if desired, but it tastes best if you let the flavours sit for a few hours or overnight before serving.
