Ingredients:

  • 1 cup plain Greek yoghurt (or plant-based high-protein alternative)
  • 1 scoop vanilla protein powder
  • 1 tablespoon almond butter
  • 1⁄2 teaspoon almond extract (optional)
  • 1 cup tart cherries, pitted and halved (fresh or frozen, thawed)
  • 2 teaspoons maple syrup or honey (optional)
  • 1⁄4 cup slivered almonds
  • 1⁄2 cup granola of choice (low-sugar, high-fibre preferred)

Instructions:

  1. In a bowl, whisk together yoghurt, protein powder, almond butter, and almond extract until smooth. 
  2. In a separate bowl, lightly mash the cherries and stir in sweetener, if using. 
  3. In two jars or containers, layer the protein-yoghurt mixture, cherry or berry compote, almonds, and granola. 
  4. Seal and refrigerate overnight.
