Ingredients:
- 1 cup plain Greek yoghurt (or plant-based high-protein alternative)
- 1 scoop vanilla protein powder
- 1 tablespoon almond butter
- 1⁄2 teaspoon almond extract (optional)
- 1 cup tart cherries, pitted and halved (fresh or frozen, thawed)
- 2 teaspoons maple syrup or honey (optional)
- 1⁄4 cup slivered almonds
- 1⁄2 cup granola of choice (low-sugar, high-fibre preferred)
Instructions:
- In a bowl, whisk together yoghurt, protein powder, almond butter, and almond extract until smooth.
- In a separate bowl, lightly mash the cherries and stir in sweetener, if using.
- In two jars or containers, layer the protein-yoghurt mixture, cherry or berry compote, almonds, and granola.
- Seal and refrigerate overnight.
