Bone Broth Basics

and a mocha protein mock-tini recipe!

For centuries, traditional cultures practiced nose-to-tail eating: making use of every part of the animal, from skin to cartilage and bones. This approach was less wasteful and provided a wider range of nutrients than muscle meat alone. As access to readily available meats from the grocery store and processed foods increased, the healthy practices of whole food and nose-to-tail eating declined.

WHOLE BODY BENEFITS

Bone broth is made by boiling animal bones for 8 to 24 hours, sometimes longer, to break down the bones and extract the nutrients. The nutrient profile is robust but varies depending on the type of bones used, typically chicken or beef, and the length of cooking time.

Bone broth includes small amounts of minerals, fat-soluble vitamins and healthy fats. One cup of bone broth provides about ten grams of protein, or as much as some protein bars! Essential throughout the body, protein makes up everything from bones to muscle, including blood, skin and hormones.

Amino acids are the building blocks of proteins, and bone broth is rich in several important ones, such as glutamine, glycine, and proline. Among these, glutamine stands out for having a unique role in supporting gut health.

Gut Health

Glutamine serves as the primary fuel for cells lining the small intestine. Since the small intestine is the primary location of nutrient absorption, glutamine may help to improve overall health. Glutamine may also reduce inflammation in the digestive tract, providing support in conditions like inflammatory bowel disease (IBD).

Collagen for Skin and Joints

The long cooking time allows the collagen to break down into gelatin. Collagen and gelatin support skin elasticity, firmness, and hydration, as well as healthy joints. Bone broth is a great option to increase these nutrients in the diet without the use of supplements.
