Chilled Cherry-Almond Protein Parfait

With seasonal cherries (or substitute any berry), magnesium-rich almonds, and a protein boost, this chilled parfait is your new post-workout power move, minus the early morning hassle.

Ingredients
1 c plain Greek yoghurt (or plant-based high-protein alternative)
1 scoop vanilla protein powder
1 T almond butter
1⁄2 t almond extract (optional)
1 c tart cherries, pitted and halved (fresh or frozen, thawed)
2 t maple syrup or honey (optional)
1⁄4 c slivered almonds
1⁄2 c granola of choice (low-sugar, high-fibre preferred)
Instructions
  1. In a bowl, whisk together yoghurt, protein powder, almond butter, and almond extract until smooth. 
  2. In a separate bowl, lightly mash the cherries and stir in sweetener, if using. 
  3. In two jars or containers, layer the protein-yoghurt mixture, cherry or berry compote, almonds, and granola. 
  4. Seal and refrigerate overnight.
