Blueberry Banana Chia Seed Parfait

A superfood dessert that kids will love!

Blueberries contain a plethora of nutrients, making them a wonderful ingredient to add into your everyday meal preparations! Add a shot of fibre- and protein-rich chia seeds and you have yourself a healthy, fun, and delicious blueberry dessert. This treat is a hit with kids and is easy enough to get little fingers involved in the preparations.

Blueberry Banana Chia Seed Parfait

Ingredients

  • 1 c almond milk
  • 1 c coconut milk, full fat
  • ⅓ c chia seeds
  • 2 Tbsp pure maple syrup or 1½ Tbsp of stevia
  • 1 tsp pure vanilla
  • 2-3 bananas, sliced
  • 1½ c blueberries, preferably organic

Topping options: hemp seeds, slivered almonds, shredded coconut.

Instructions

  1. In a large glass bowl, mix the chia seeds, both milks, maple syrup, and vanilla until it’s combined, making sure there aren’t any clumps of chia seeds.
  2. Cover and place in the fridge for four hours or make the night before. If the pudding comes out too thin, mix in another tablespoon of chia seeds. If the pudding is too thick, add a splash of milk to thin it to desired consistency.
  3. Using four small parfait glasses or regular 8-10 oz glass cups, spoon in 1-2 tablespoons of the chia pudding, then add a layer of blueberries and sliced bananas repeating these steps and adding toppings if desired.
