Navy Bean Vegetable Soup
When life gets hectic during these colder months, nothing warms the body and soul like a steaming bowl of hot soup. Crafted with a mouth-watering blend of protein- and fiber-rich navy beans and veggies galore, this vegan recipe is a flavorful energy booster that the whole family can enjoy.
- 1/2 cup EDEN Dry Navy Beans, soaked
- 4 cups water
- 1 clove garlic, minced
- 1 cup diced onions
- 1/4 cup diced carrots
- 1/4 cup green string beans, cut into 1 inch lengths
- 1/4 cup green peas, fresh or frozen
- 1 1/2 cups organic diced tomatoes
- 1/2 tsp EDEN Dried Basil
- 1/4 tsp EDEN Dried Oregano
- 1/2 tsp EDEN Sea Salt
Place beans and water in a heavy pot and bring to a boil. Cover, reduce the flame to medium low and simmer until tender, about 1 hour and 20 minutes. Add all remaining ingredients. Cover and simmer another 10 minutes.
