This gluten-free, dairy-free dessert requires zero oven time on those hot summer days. It also offers a quick and easy way to turn the humble strawberry into an elegant dessert to serve at your summertime dinner parties. Finish with a little fresh mint from the garden, and it tastes just like summer in a bowl.
Ingredients
2 c fresh Ontario strawberries (chopped with greens removed)
1⁄2 c fresh mint leaves (chopped)
1 T balsamic vinegar
1⁄4 c cane sugar, monk fruit or honey
2 c Greek yoghurt or vegan yoghurt
Instructions
- Combine the chopped strawberries with the mint, vinegar, and sweetener in a large bowl and gently mix until all berries are coated.
- Let sit for at least 1 hour before serving in individual little bowls or ramekins of yogurt.
- Top with the remaining vinegar-sugar mixture that you’ll find at the bottom of your strawberry bowl.
