Ingredients
1 cn white beans (drained and rinsed)
2 small shallots (chopped)
1⁄2 lemon, juiced
2 t red wine vinegar
2 T extra virgin olive oil
1⁄4 c fresh herbs (use a combination of finely chopped rosemary, tarragon and thyme)
salt and pepper (to taste)
Instructions
- Combine all ingredients into a large serving dish or bowl.
- You can serve right away if desired, but it tastes best if you let the flavours sit for a few hours or overnight before serving.
