Cherry Lime Coconut Balls

These cherry lime coconut bites are an easy, no-bake treat. They’re gluten-free, paleo, plant-based and a little bite of tart, citrusy perfection!

Ingredients

  • 1 c frozen cherries, pitted

  • ½ c tahini 

  • ½ c sunflower seeds

  • ½ c coconut flour

  • 1 lime, juiced and zested

  • 3 tbsp coconut oil

  • ¼ c coconut oil 

  • 2–3 tbsp honey (optional) 

  • desiccated coconut, for rolling

Instructions

  1. Place all ingredients except coconut into a food processor and mix until it resembles a thick paste and forms a ball. If the mixture looks dry, add additional coconut oil, lime juice, or honey as needed. 

  2. Use a spoon to scoop out 1-inch balls and roll each in desiccated coconut.

  3. Allow to set for an hour in the fridge before enjoying. Can be stored in an airtight container for one week in the fridge, or about a month in the freezer.
